This one is for the carnivores! The sleek and futuristic TOJIRO Steak set is a must-have for all the steak lovers who’ve gotten way too used to the sharpness of Japanese knives but don’t want to look ridiculous eating with a fork and a gyuto at the dinner table.
VG-10 steel is an ideal choice for a sharp steak knife, as it has great corrosion resistance and stainless qualities, but can still attain a very fine edge. VG-10 steel can be also sharpened easily, but no worries – the knives will withstand many a dinner parties before needing any treatment from your whetstones.
Just go easy on them if you’re cutting on porcelain or ceramic plates, as they could dull a bit faster. We recommend serving your steaks on a wooden (or any softer) surface – the knives will appreciate it.
BLADE SHAPE:
Steak knives are the sharpest knives on the dinner table. Normal, slightly serrated table knives are not sharp enough for steaks, which will result in shredded pieces of meat instead of tender, smooth cuts that we usually have in mind when we picture a perfect medium-rare steak. Sharpness preserves freshness and keeps the juices inside.
STEEL:
VG-10 (V for Vanadium, G for "gold" as in "gold standard") is made by Takefu Special Steel Company, a relatively small steel company that around 60 years ago managed to find just the right balance of different elements to create the most popular Japanese knife making steel today. VG-10 steel is stainless steel with relatively high Carbon (C) content (1%), 15% Chromium (Cr), 1% Molybdenum (Mo), 0.3% Vanadium (V) and 1.5% Cobalt (Co). The combination of Cr, Mo, and V forms a lot of hard carbides, making the steel abrasion resistant which translates to long-lasting, smooth sharpness.
LAMINATION:
The core layer consisting of VG-10 steel was sandwiched between two layers of softer steel. This technique is called san-mai and is used to protect the hard (but delicate) core from outside factors and physical impacts, which could lead to breakage.
GEOMETRY:
The knives have double bevel (symmetrical) blades.
BLADE FINISH:
The 63-layer damascus pattern on the knife’s blade will ensure your dinner party guests won’t just be impressed by how effortless their cutting will be, but also by the blade’s spectacular look.
HANDLE:
The knife is fitted with a yo-style, ergonomic Western style handle made of black micarta, a very durable wood composite. The handle is visually enhanced with the insert of a stainless steel detail. The weight of the handle complements the weight of the blade perfectly and provides an even balance, making it easy and comfortable to use. The handle also offers a secure and firm grip that will prevent the palm from sliding against the blade.
