BLADE SHAPE:
Designed for cutting vegetables, the Nakiri shape is perfect for long or short cuts, while the thin tip allows for precise work. The Nakiri aka Nakiri Bocho is a traditional Japanese knife with a square, thin blade and a deep, flat belly. Because the entire flat edge of the knife touches the cutting board in a clean, vertical motion, no horizontal pulling or pushing is required.
STEEL:
This Nakiri knife is part of TOJIRO's Basic knife series, which features the popular VG-10 core steel.
LAMINATION:
The core layer is clad into 2 layers of softer steel (san-mai lamination).
GEOMETRY:
It has a double bevel (symmetrical) blade.
BLADE FINISH:
The blade has a simple Migaki look.
HANDLE:
The handle is made of sturdy and relatively light pakka wood (no padding), allowing for an ergonomic and fatigue-free grip. The handle is equipped with three rivets for secure fastening, reducing the possibility of cracks in the handle.
