Yu Kurosaki Sujihiki Raijin 270mm is an outstanding blade from the hands of master blacksmith Yu Kurosaki. As with all of his knives, the fit and finish are superb, showcasing remarkable craftsmanship and attention to detail. At 270 mm (10.6"), this sujihiki is a long, elegant slicing knife—ideal for clean, precise cuts of meat and fish using smooth, uninterrupted drawing strokes.
The Raijin line is named after Raijin (雷神), the Shinto god of thunder and lightning. A powerful and awe-inspiring deity, Raijin commands storms, with his presence symbolized by roaring drums and bolts of lightning. The blade's distinctive hammered pattern captures this elemental force, with bold, deep impressions that echo the crash of thunder and the flash of lightning.
BLADE SHAPE:
Sujihiki, or slicer knives, are designed for long, clean slicing motions—particularly for meat, boneless fish, trimming, and skinning.
→ The long, straight blade excels at portioning large cuts. Blade length: 270mm (10.6").
→ Distal taper: 3.7 mm (0.15") at the handle, narrowing to 1.6 mm (0.06") at the tip.
STEEL:
Made from Cobalt Special Steel – a high-performance Japanese stainless steel enriched with cobalt for outstanding sharpness, edge retention, and corrosion resistance. Crafted for serious kitchen work.
LAMINATION:
The steel is laminated, meaning that the core is made of very strong steel covered with an external layer of softer stainless steel − also known as san-mai clad.
GEOMETRY:
It has a double bevel (symmetrical) blade (50/50). The blade has a concave V-edge profile, which means that the blade tapers all the way from the spine to the edge on both sides at a common angle. This kind of grind offers a good balance between the ease of cutting and robustness.
BLADE FINISH:
The Raijin hammered finish consists of deep, thunder-inspired tsuchime (hammered) finish that capture the spirit of the storm. This powerful texture gives the blade an unmistakable character while also reducing food adhesion.
HANDLE:
The handle is made from beautiful dark rosewood, and because of its symmetrical octagonal shape, it is perfect for both left- and right-handed users.

Yu Kurosaki is a young, talented master blacksmith who lives in Takefu Knife Village, close to the city of Echizen. His knives are well known throughout Japan and also around the world for their beautiful, unique-looking design and superior quality. Hammer dents on the blade are his signature finish, and just like with snowflakes, not a single dent is alike. Needless to say (but we will say it anyway), his knives don’t only look great but they’re also made of high-quality steel and have a razor sharp, long-lasting edge.
